Woodpigeon is a very underrated sporting and culinary bird, living in the secluded parts of the local forests and woodlands, and dining out on the cereals, berries and clover fields of the surrounding farmlands and hedgerows. It has a rich, dark ruby-coloured flesh, and is intensely flavoured, rather like small steak portions. Here are a couple of methods of cooking them:


  • Spiced Pigeon Casserole

  • Cushie Kiev
    This is a simple adaptation of chicken Kiev, which is a favourite of many who have sampled it; it is easy to prepare and a great way of tempting kids to try game out. It’s also a simple recipe to get them to help with and learn how to cook! Allow 1-2 breasts per person, according to age and appetite of your family!
