Rabbit is a low-in-cholesterol, flavoursome alternative to chicken, especially the bland, mass-produced variety found in many supermarkets these days. The Romans introduced rabbits to Britain as a food source, and the Normans appointed ‘Warreners’ specifically to conserve this reliable (and renewable!), very under-rated, delicious food source. In more recent times the rabbit was a staple of the country folk, until the outbreak of Myxamatosis in 1954, which devastated the population throughout the land. Happily, numbers have increased again more recently.
